These delicious Frosted Banana Bars are a guest favorite, and the perfect food to whisk you away to the foothills of Nebraska’s cowboy country. Try the recipe yourself and unleash your inner cowboy!

For the bars

1/2 cup butter (softened)

2 cups sugar

3 eggs

1 1/2 cups mashed ripe bananas (3-4 bananas)

1 tsp vanilla extract

2 cups flour

1 tsp baking soda

 

 

For the frosting

1/2 cup butter (softened, but not melted)

1 x 8oz pack of cream cheese ( softened)

4 cups powder (confectioners) sugar

2 tsp vanilla extract

Method

1. First, make the bars. In a mixing bowl, cream together the butter and sugar. Then beat in the eggs, mashed bananas, and vanilla until well combined. Finally add the flour and soda and mix well.

2. Pour the mixture into a greased 15in x 10in x 1in pan. Bake at 350F for 25 minutes or until an inserted skewer or knife comes out clean. Make sure not to overbake! Leave to cool.

3. Meanwhile, make the frosting. In a bowl, combine the frosting ingredients and beat well until fully combined and you get a smooth consistency. Pour over the cooled bar mixture and leave aside until set, before cutting into bars.
